For 1 cup

Equipment

  • Small saucepan
  • Fork
  • Stick blender
  • Bowl
  • Jug

Instructions

  1. Step 1: Place the ingredients in a small saucepan over medium heat. As the mixture heats, the raspberries will release liquid. When the liquid is simmering and the raspberries have softened, mash them with a fork.

  2. Step 2: Simmer for 3 minutes. Purée with a stick blender. If the blender head is submerged in the saucepan, blend in the pan; otherwise, transfer the mixture to a jug first.

  3. Step 3: Strain into a bowl if desired, pressing out as much coulis as possible. Discard the seeds.

  4. Step 4: Cool completely on the counter, then refrigerate until needed; the coulis will thicken as it cools. Once cool, thin with a little water if needed. It is typically served cold, but can also be used warm.

Notes

Freeze for up to 3 months.

About this recipe

This bright, tart-sweet sauce comes together with raspberries, sugar and a little lemon juice. Use fresh or frozen berries; there is no need to thaw frozen raspberries.

Raspberries, sugar and lemon juice for the coulis.

Simmering the berries helps the sauce become syrupy and cling to desserts. Strain it for a smoother finish, or leave the seeds in for a more rustic texture.
