Method
Step 1: Toss the chicken with the seasoning sauce and pepper. Set aside while you finish preparing everything else.
Step 2: Mix the sauce ingredients in a small bowl. It may not seem like enough sauce for the noodles, but it is concentrated with flavor.
Step 3: Heat 2 tablespoons of oil in a large 30 cm / 12-inch non-stick pan over high heat until very hot. Add the onion and stir for 15 seconds. Add the chicken and stir for 2 minutes, until almost cooked through.

Tip: If your pan is smaller, cook the chicken and vegetables separately from the noodles and sauce; see the notes for the adjusted method.
Step 4: Add the garlic and Chinese broccoli stems. Stir for 1 minute or until the chicken is cooked.
Step 5: Push everything to one side of the pan and drizzle 1/2 tablespoon oil into the cleared space. Pour in the eggs and gently stir to scramble. When they're almost cooked, toss them through the chicken.
Step 6: Add the Chinese broccoli leaves, then place the noodles on top. Pour the sauce over the noodles. Use two spatulas to toss until the noodles are coated with sauce and there is no water left in the pan.

Step 7: Serve immediately.
Notes
Prepare the glass noodles according to the packet. If soaking, use boiling water for 2 to 3 minutes, then drain and rinse briefly under tap water to help keep the noodles from sticking together.
Rice vermicelli can be used instead of glass noodles. For the greens, choi sum, bok choy or pak choy are options; chopped cabbage, bean sprouts or julienned carrots can also be used.
If you don't have a 30 cm / 12-inch pan, cook the chicken and vegetables separately from the noodles and sauce. After scrambling the egg, remove everything from the pan. Heat a little more oil, add the greens, noodles and sauce, and toss until the sauce coats the noodles. Return the chicken mixture to the pan, toss together and serve.
Refrigerate leftovers for up to 3 days and reheat in the microwave.
