Instructions

Poppyseed Dressing

  1. Step 1: Place the dressing ingredients in a jar and shake well. Set aside for at least 10 minutes. The dressing keeps for a week.

Candied Pecans

  1. Step 2: Place the butter and sugar in a nonstick skillet over medium-high heat. When the butter is melted, add the pecans.

  2. Step 3: Stir for 5 minutes. The sugar will turn sandy, then eventually melt into a caramel.

  3. Step 4: Once the sugar melts, cook for 2 minutes, then spread the pecans out on a tray.

Pecans lightly coated in caramel, spread out to cool.
  4. Step 5: Let cool, then break apart to separate the pecans.

Assemble Salad

  1. Step 6: Place the spinach and onion in a bowl. Drizzle with about 3 tbsp of dressing and toss.

  2. Step 7: Transfer one-third of the spinach to a bowl. Scatter over one-third of the strawberries, avocado, feta and pecans. Drizzle with a little dressing.

  3. Step 8: Top with another third of the spinach, strawberries, avocado, feta and pecans, then add a little more dressing. Repeat once more.

  4. Step 9: Serve immediately.

Notes

For a quicker side salad, use plain pecans instead of candying them. Other nuts can also be used, including flaked or roughly chopped almonds.

Dress the salad just before serving. Dressed leftovers do not keep well, and the spinach starts to wilt after about 30 minutes. When transporting the salad, keep the components separate and assemble before serving.
