Instructions
Method
Step 1: Heat 2 tablespoons of the oil in a large heavy-based pot over medium-high heat. Add the sausages and cook until golden. Remove them with a slotted spoon.

Step 2: Add the remaining 1 tablespoon of oil. Add the garlic and onion and cook for 2 minutes. Add the capsicum and cook for 2 minutes, until the onion is translucent.
Step 3: Add the rice, chicken stock, paprika, salt, pepper and sausages. Stir and bring to a boil, then reduce the heat to low so the mixture simmers very gently.
Step 4: Cover with a lid and cook for 20 minutes.
Step 5: Remove the pot from the stove. Working quickly, remove the lid, add the peas, then replace the lid. Rest for 10 minutes; the residual heat will cook the peas.
Step 6: Add the parsley. Use a fork to fluff the rice, then serve immediately.
Notes
Ingredient options
Raw sausages can also be used. Cut them into small chunks rather than slices, then cook them in the pot.
Basmati rice works with the same liquid amount. Medium- or short-grain white rice will be stickier. For jasmine rice, reduce the liquid by 1/4 cup. Brown rice, paella rice, risotto rice, wild rice and quinoa are not suitable with the recipe as written.
There is no need to rinse packaged rice. If you do rinse it, reduce the stock by 2 tablespoons.

About this recipe
Smoked sausage seasons the rice as it cooks, making this one-pot dinner full of savory flavor. Use kransky or another smoked sausage, such as kielbasa or chorizo.

Long-grain white rice gives the loosest texture, while peas and red and yellow peppers bring color to the pot.

A flexible one-pot dinner

You can vary the vegetables with options that hold up to the rice’s 20-minute simmer, including carrots, corn, celery, zucchini or green beans.
