Instructions
Sesame coating
Step 1: Pat the tofu dry with paper towels. Sprinkle it with the salt and pepper.
Step 2: Place the flour, egg and sesame seeds in separate bowls.
Tip: Medium shallow bowls work well.
Step 3: Press the tofu into the flour and shake off the excess. Dip it in the egg, then let the excess drip off. Coat the tofu in sesame seeds, pressing them all over to adhere. Repeat with the remaining tofu.

Cooking
Step 4: Heat the oil in a nonstick skillet over medium heat. Add the garlic and cook until golden and crisp. Remove it and drain on paper towels.
Step 5: Turn the heat up to medium-high. Place the tofu in the skillet and cook for 1 1/2 minutes, until the sesame smells nutty and becomes crisp. Turn carefully and cook the other side for 1 1/2 minutes. Use tongs to prop the tofu steaks on their sides and crisp the edges, about 30 seconds per side.

Tip: Turn the tofu carefully so the sesame crust stays in place.
Step 6: Transfer the tofu to a paper towel-lined plate.
Step 7: Lower the heat to medium and add the teriyaki sauce ingredients. Simmer for 1 minute, until the sauce reduces to a syrupy consistency, then remove the skillet from the heat.

Step 8: Place the tofu steaks on a plate. Spoon the teriyaki sauce over them, then sprinkle with the garlic and green onion. Serve.
Tip: The sauce clings to the sesame crust, which stays crisp.
Notes
For the best crisp, toasty coating, serve the tofu freshly made. It stays crisp for about a day without sauce; reheat it with a quick pan-fry.
Use light or general-purpose soy sauce; avoid dark or sweet soy sauce. White or black sesame seeds can be used on their own.

About this recipe
Firm or hard tofu is sturdy enough to slice and handle as steaks. Coat it in flour, egg and sesame seeds, pan-fry until crisp, then spoon over the teriyaki sauce.

Black and white sesame seeds give the crust contrast; use either type on its own if preferred.
