For 1 cup
Classic Italian additions
Herb alternative
Equipment
- Tall container
- Stick blender
- Small food processor
Instructions
Step 1: Place the ingredients in a tall container. Blend with a stick blender until finely puréed, or stop sooner for a coarser texture. A small food processor can also be used.

Step 2: Serve with steaks, chops, roasted lamb, beef, pork, chicken, or seafood, especially fish. It also goes well with legumes, cooked vegetables, and eggs. Use it like tapenade or pesto: spread it on crostini or in sandwiches, dress salads with it, or toss it with pasta.
Notes
Keep the sauce in an airtight container in the refrigerator for 4 to 5 days, or freeze it for up to 3 months.
For a sharper sauce, add more vinegar. The capers can be left out.
About this recipe
This bright, savoury green sauce combines basil, parsley, and mint with capers, gherkins, red wine vinegar, and olive oil. Blend it smooth or leave it a little coarse, then serve it with meat, seafood, vegetables, or eggs.

For a more classic Italian-style variation, add the garlic and anchovies and use mostly parsley for the herbs.
