Instructions
Step 1: Place a sheet of paper towel on a heatproof plate. Spread the rosemary on the paper towel, then cover it with another single sheet of paper towel.
Step 2: Microwave on high in 4 increments of 30 seconds, until the rosemary leaves are fully dry and crumble into powder between your fingers while still a vibrant green.

Step 3: Grind the rosemary into a coarse powder in a mortar and pestle, or crumble it with your fingers. Aim for a mixture of fine powder and small rosemary pieces.

Step 4: Measure out 3 teaspoons of the rosemary powder and mix it with the salt in a small bowl.
Step 5: Sprinkle over homemade fries or cooked proteins, or use in place of plain salt in cheese muffins, on focaccia, or in salad dressings. Use uncooked when possible, since the rosemary can burn. Store in an airtight container in the pantry.
Notes
Table salt’s fine grains stick well to foods such as fries, but you can use any type of salt.
For the oven option, dry the rosemary on a tray at 100°C (fan or standard) or 210°F. The recipe notes give 20 minutes; the article gives a range of 15 to 20 minutes. Begin checking at 15 minutes and check every minute, removing the rosemary before it turns golden.
Store in an airtight container in the pantry. It keeps for a few weeks, though the rosemary flavor fades over time.
