Instructions
Step 1: Preheat the oven to 220°C/430°F (200°C fan).
Step 2: Snap the woody ends off the asparagus; they will naturally break at the right point.

Step 3: Pile the asparagus onto a tray. Drizzle with oil, sprinkle with salt, pepper and garlic, then toss and spread the spears out on the tray.
Step 4: Roast for 7 minutes, or until the ends have a little color and the asparagus is just cooked through. Very thick spears take 10–12 minutes. Keep an eye on them so they do not become wrinkled.
Step 5: Remove the tray from the oven.
Step 6: Toss the asparagus with lemon juice, if using. Pile it onto a serving platter, grate over the optional Parmesan, and serve.
Notes
For another serving idea, pair the asparagus with poached egg and Hollandaise sauce, or serve it alongside toast with ricotta.

About this recipe
Roasted asparagus gets a little color in a hot oven, then lemon juice and freshly grated Parmesan bring a bright, savory finish. Garlic, olive oil, salt and pepper season the spears.

Medium asparagus roasts in about 7 minutes; very thick spears take longer. Serve it as a quick side with roasts, fish, prawns or chicken.
