Instructions
Step 1: Mix the sauce ingredients together in a bowl.

Step 2: Trim the stem ends from the beans, then cut them into 2–2.5 cm pieces.
Step 3: Heat 1 1/2 tbsp oil in a heavy-based skillet over high heat until smoking. Add the beans and spread them out to cover the base. Leave for 1 minute, then quickly stir and spread them out again. Cook for 30 seconds. Stir, leave for another 30 seconds, then repeat once more, for about 2 1/2 minutes total. Cook until the beans are charred but still tender-crisp, not withered and floppy. Transfer to a bowl.

Step 4: Turn the heat down to medium-high and add 1 tbsp oil. Add the onion, followed by the garlic and ginger. Cook for 1 minute, until the edges of the onion are golden.
Step 5: Turn the heat back up to high. Add the pork and cook, breaking it up as you go, for 2 minutes until cooked through. Add the sauce and cook for 30 seconds. Add the beans and stir for another 30 seconds.

Step 6: Serve over rice. If using, garnish with slices of red chilli. Mix the pork into the rice and eat with a spoon.
Notes
For frozen green beans, thaw, drain well and pat dry so they can char. Chopped garlic and ginger are less likely to stick and burn in the hot skillet than grated or minced aromatics.
Chicken, turkey or beef can replace the pork. Light or all-purpose soy sauce will work in place of dark soy sauce, though the pork will not have the same colour. Chinese cooking wine can be replaced with 1/4 cup low-sodium chicken stock; cook for an extra minute to reduce the sauce. Sriracha, sambal oelek or another vinegary hot sauce can stand in for chilli garlic sauce; adjust the amount to suit its heat.
For a lower-carbohydrate alternative to rice, serve with cauliflower rice.
