Instructions

Instructions

  1. Step 1: Mix the sauce ingredients in a small bowl.

Broccoli being cut and sauce being mixed in a bowl.
  2. Step 2: Heat the oil in a large, deep 30 cm / 12-inch pan over high heat, or use a large pot. Add the garlic and onion and cook for 30 seconds. Add the beef and cook, breaking it up as you go, until no red remains. Add the sauce and cook until it coats the beef well.

Sauce being added to beef in a pan, followed by broccoli being stirred through.
  3. Step 3: Add the broccoli and stir to coat it in the sauce.

Tip: The broccoli will cook through in the next step.

  4. Step 4: Add the water. When it starts bubbling, push in the noodles, breaking the cakes in half along the direction of the noodles so they fit more easily. Leave for 30 seconds, then turn the noodles. Leave for another 30 seconds, then toss with two spatulas or tongs until softened and the sauce has been absorbed, about 2–3 minutes. If the noodles need a little longer, add a bit more water.

Water added to the pan, followed by instant noodle cakes being broken in half.
  5. Step 5: Divide between bowls and serve. Add a drizzle of sriracha for heat, if you like.

Notes

For a soy sauce substitute, use light soy sauce, all-purpose soy sauce, or tamari; the noodles and beef will have a lighter color and slightly less soy flavor. Hoisin sauce can be replaced with oyster sauce and an extra 1/4 teaspoon Chinese five spice. For an alcohol-free option, replace half the water with chicken stock. Carrot, cauliflower, capsicum, mushrooms, green beans, or baby corn can replace the broccoli.

Refrigerate leftovers for up to 3 days.
