Instructions
Meatloaf
Step 1: Heat the oven to 180°C (350°F). Oil or spray a loaf pan.
Step 2: Mix the glaze ingredients together in a small bowl and set aside.
Step 3: Put the breadcrumbs in a very large bowl. Grate the onion over them, then mix until the breadcrumbs are all wet.
Step 4: Add the remaining meatloaf ingredients. Mix well with your hands. Form the mixture into a loaf, pinching it together and smoothing over creases and cracks to help prevent cracks during baking.

Step 5: Transfer the loaf to the pan. Brush generously with about half of the glaze.

Step 6: Bake for 45 minutes. Remove the pan from the oven and brush the loaf with most of the remaining glaze. If excess fat has pooled, scoop or pour it off.
Step 7: Bake for a further 30 minutes, then remove from the oven.
Step 8: Let the meatloaf stand for 10 minutes before turning it out and cutting it into thick slices. A little crumbling at the edges of the first couple of slices is normal.
Step 9: Serve with a dollop of ketchup, creamy mashed potatoes, and steamed vegetables.
Notes
Panko breadcrumbs make the meatloaf softer than regular breadcrumbs.
For the beef bouillon, chicken or vegetable bouillon or stock powder can be used instead. Plain salt can be used as a substitute: use 1.5 tsp.
A loaf pan about 23 x 13 x 6 cm (9 x 5 x 2.5 inches) works for this recipe. The loaf may be flatter or taller if the pan is a different size.
Leftovers make terrific sandwiches.

About this recipe
This beef meatloaf is seasoned with onion, garlic, herbs, and beef bouillon, then finished with a sticky ketchup glaze. Let it rest before slicing and serve with creamy mashed potatoes and steamed vegetables.
For a tender loaf, use beef that is not lean and grate the onion so its juices soak into the breadcrumbs.
