Instructions

  1. Step 1: Preheat the oven to 200°C / 400°F (180°C fan-forced).

  2. Step 2: Place the pumpkin, onion, and walnuts on a large, paper-lined tray. Drizzle with the olive oil and maple syrup, then toss to coat. Sprinkle with the chili flakes and salt, toss again, and spread the ingredients out on the tray. Leave space between the pieces so they roast rather than stew.

  3. Step 3: Roast for 30 minutes, or until the pumpkin is lightly browned and cooked through. Toss once after 20 minutes.

  4. Step 4: Remove the tray from the oven and gently toss the pumpkin again. Transfer it to a serving platter in a single layer, crumble over the feta, and sprinkle with parsley and fresh chili. Alternatively, sprinkle the garnishes over the tray and pile the pumpkin into a bowl. Serve immediately.

Notes

Variations and storage

Eating pumpkin, butternut squash, or sweet potato can be used. Honey can replace the maple syrup; brown sugar is another option when mixed with the olive oil before tossing. Use Greek feta in place of Danish feta, or choose goat cheese.

Other nuts can replace the walnuts. If using pine nuts, sunflower seeds, pepitas, or other small nuts or seeds, add them halfway through roasting. Leftovers keep for 3 days.
