Notes

Ingredient options

Use chicken, pork, beef, turkey, prawns or firm tofu as the protein. For ground meat, cook it after the onion and garlic; once cooked, stir in 1 tablespoon of sauce before continuing. Cut firm tofu into 1 x 4 cm batons. Use small, peeled prawns.

For dried noodles, use 200 g (8 oz) uncooked ramen or other dried noodles and prepare them according to the packet. Other noodles, including rice noodles and long pasta, can also be used.

Chinese cooking wine can be replaced with Mirin, cooking sake or dry sherry. For a non-alcoholic option, replace both the cooking wine and water with low-sodium chicken stock and reduce the light soy sauce to 1.5 tablespoons.

If using Mirin, omit the white sugar. Black pepper can replace the white pepper; the toasted sesame oil is optional.

For more vegetables, add another 2 1/2 cups of chopped vegetables.
