- Box grater
- Large bowl
- Skewers
- Large skillet
- BBQ grill
- Oven grill
- Platter
Instructions
Prepare the sauce and koftas
Step 1: Combine the yogurt sauce ingredients and leave the sauce in the fridge for at least 20 minutes so the flavor can develop. It can also be left overnight.
Step 2: Grate the onion into a bowl using a box grater. Add the remaining kofta ingredients and mix well with your hands.
Step 3: With damp hands, divide the meat into 8 equal pieces and push and shape the meat onto 8 skewers. Make the koftas smooth or leave them a bit nubbly for more surface area to brown.

Choose a cooking method
Step 4: Stove: Preheat 1/2 tbsp oil in a large skillet over medium-high heat. Cook the koftas in batches for 5 minutes total, turning to brown evenly all over.
Step 5: BBQ: Cook over medium-high heat for about 6 minutes, rotating the koftas to brown all over.
Step 6: Broiler or oven grill: Preheat the grill and cook the koftas 30 cm (10 inches) from the heat source for 12 minutes, rotating as needed until lightly browned. They will not brown as well as on the stove or BBQ.
Serve
Step 7: Pile everything onto a platter and let everyone serve themselves.
Step 8: Spread yogurt sauce on a flatbread, top with red cabbage mint salad, then add a kofta. Drizzle with more yogurt sauce.
Notes
Wooden or bamboo skewers need a 30-minute soak before threading if you plan to cook the koftas on a BBQ grill or under the oven grill. Metal skewers do not need soaking, and neither do skewers used on the stove or on the plate side of a BBQ.
The koftas can be prepared ahead and refrigerated or frozen.
About this recipe
These warmly spiced lamb koftas are shaped onto skewers and cooked on the stove, BBQ, or under the oven grill. Serve them in flatbreads with lemon-garlic yogurt sauce and a fresh salad.

The sauce needs at least 20 minutes in the fridge for its flavor to develop. For serving, set out the flatbreads, koftas, sauce, and salad so everyone can assemble their own.
