Instructions
Tray bake
Step 1: Preheat the oven to 200°C/400°F (180°C fan-forced).
Step 2: Place the kofta ingredients and spices in a bowl. Use your hands to combine thoroughly, then roll 16 large-ish meatballs. Spread them out on a large tray.

Tip: You can scoop the mixture onto a tray before rolling it into balls.
Step 3: Toss the vegetables with the oil, salt and pepper. Scatter them around the meatballs.
Step 4: Spray the meatballs with oil. Bake for 15 minutes, then switch the oven to the grill/broiler on high. Cook for a further 5 minutes to colour the surface.

Step 5: Sprinkle with the chopped coriander and serve. To make wraps, stuff flatbreads with lettuce, tomato, meatballs, capsicum and onion. Drizzle with tahini sauce or lemon yogurt sauce. Alternatively, serve in rice or couscous bowls or with a big salad.
Notes
For a warm salad, serve the meatballs and vegetables with roasted cauliflower. Other roastable vegetables can be used in place of the capsicum and onion. Parsley can replace the coriander in the meatballs.
