Instructions

Pasta

  1. Step 1: Bring a large pot of salted water to a boil. Add the pasta when you start cooking the mushrooms.

  2. Step 2: Cook the pasta according to the packet instructions, minus 1 minute. Reserve 1 mugful of pasta cooking liquid, then drain the pasta.

Mushrooms

  1. Step 3: Melt half the butter and all the oil in a large skillet.

  2. Step 4: Add the mushrooms and cook until their liquid has released and evaporated and the mushrooms start to turn golden around the edges, about 5 minutes.

  3. Step 5: Halfway through cooking, add the salt and pepper.

  4. Step 6: Add the garlic and remaining butter. Cook for 2 minutes, until the mushrooms and garlic are golden.

  5. Step 7: Add the pasta, about 3/4 cup of reserved pasta water and the Parmesan. Toss gently until the water reduces and thickens into a glossy coating on the pasta. If the pasta dries out, add more pasta water.

  6. Step 8: Taste and add more salt and pepper if needed.

  7. Step 9: Remove from the heat and serve immediately, garnished with chopped parsley and grated Parmesan.

Notes

Variations and reheating

Use any type of mushroom that can be sliced. Button mushrooms work well; Swiss brown or cremini mushrooms are also good options. Thyme pairs well with the mushrooms, and a splash of cream is an optional richer addition.

For reheating, reserve about 1/4 cup of pasta cooking water. Sprinkle the cold pasta with 2 tablespoons of the water, microwave until hot, then toss well.

About this recipe

Golden mushrooms, garlic and Parmesan make a savory coating for pasta, while a splash of starchy pasta water helps it turn glossy. Add some of the butter after the mushrooms have browned for buttery flavor throughout.
