Instructions
Step 1: Preheat the oven to 180°C/350°F.
Step 2: Make the ranch dressing base: Combine the mayonnaise, sour cream, buttermilk, parsley, dill, vinegar, lemon juice, Worcestershire sauce, onion powder, and garlic powder in a bowl. Set aside for 10 minutes to let the flavours develop.
Step 3: Warm the ranch dressing in a saucepan over medium-low heat. Add the cream cheese, hot sauce, and pepper. Stir until the cream cheese melts and the mixture is combined and smooth.
Step 4: Transfer the hot cream mixture to a large bowl. Add the chicken, three-quarters of the cheese, reserving the rest for the top, and the green onion. Mix until fully combined.

Step 5: Transfer the mixture to a 6-cup / 1.5 L casserole dish and top with the remaining cheese.

Step 6: Bake for 20 minutes, until bubbly and golden. For more browned spots, switch on the broiler/grill for the last few minutes.
Step 7: Garnish with the reserved green onion. Serve with corn chips, crackers, or vegetable sticks.
Notes
Make-ahead and storage
To make buttermilk, mix 1/3 cup full-fat milk with 1/2 teaspoon lemon juice and leave it for 10 minutes, until curdled. Use the whole mixture in the recipe.
Refrigerate leftovers for 4 to 5 days. Reheat in the microwave or cover and bake until molten. Leftovers can also be used in sandwiches.
For a smoother melt, shred the cheese yourself. The dip can look slightly split, with red oil streaks through the creamy mixture.

About this recipe
This hot Buffalo chicken dip combines shredded chicken, homemade ranch dressing, hot sauce, and plenty of cheese. Bake it until bubbling and golden, then serve it warm with chips, crackers, crostini, or vegetable sticks.

The ranch base rests for 10 minutes before it is warmed with cream cheese and hot sauce. For a milder dip, hold back some of the Buffalo sauce and stir in as much as you like just before baking.
