Ingredients
Instructions
Step 1: Melt the butter in a frying pan over medium heat.
Step 2: Add the onions, salt, black pepper, onion powder, and cayenne pepper. Cook for 5 minutes, stirring. Reduce the heat to medium-low and cook for 20 to 25 minutes, stirring occasionally, until the onions are sweet and golden. Remove the pan from the heat and let the onions cool.

Step 3: Put the cream cheese, sour cream, and mayonnaise in a bowl. Mix until smooth. If needed, use the microwave in 10-second bursts to soften the mixture.
Step 4: Add the caramelized onions and mix until just combined. Refrigerate for at least 2 hours to let the flavors develop; overnight is even better.
Step 5: Serve at room temperature, garnished with chopped chives if desired. Serve with plain crinkle-cut potato chips.
Notes
The dip can be kept for 4 to 5 days. Its flavors are even better the next day.
