Instructions
Step 1: Roughly chop the artichokes.
Step 2: Squeeze the excess liquid out of the spinach. Use paper towels or a clean dish towel, or put the spinach in a colander and press out the liquid with a wooden spoon.
Step 3: Put the cream cheese in a large heatproof bowl. Microwave in two 30-second bursts, or until softened. Mix until smooth.
Step 4: Add the remaining ingredients and mix just until combined. Do not mix vigorously, or the artichokes and spinach will break down.
Step 5: Warm the dip in the microwave to your taste. Adjust the salt and pepper to taste.
Step 6: Serve warm or at room temperature with crackers, vegetable sticks, or chips.
Notes
Make the dip ahead to give the flavours time to develop. Refrigerate for up to 4 days, or freeze; thaw, reheat, and mix well before serving. If using fresh garlic instead of garlic powder, use the dip within 3 days.
Artichoke hearts in olive oil or thawed frozen artichokes can be used instead of artichoke hearts in brine. For a variation, use more sour cream or yoghurt in place of some of the mayonnaise.
