Equipment
- Large skillet
- Tongs or two wooden spoons
- Serving platter
Instructions
Step 1: Trim the stems from the leaves, then wash the leaves very well; spinach often holds a lot of dirt.

Step 2: Shake off excess water, but do not dry the leaves. The water droplets help steam-cook the spinach.
Step 3: Heat the oil in a large skillet over medium-high heat. Add the garlic and cook for 20 seconds, until it becomes light golden.
Step 4: Add the spinach. Use tongs or two wooden spoons to toss it until it wilts, about 2 minutes. Stop while it is just wilted if you prefer it less limp.

Step 5: Remove the skillet from the heat immediately. Sprinkle the spinach with salt and pepper, then toss once more.
Step 6: Transfer the spinach to a serving platter and serve.
Notes
If using bunches of spinach with stems, the leaves from each bunch amount to about 3 to 4 large handfuls; use around 8 handfuls in total. Baby spinach also works, but use more because it wilts further.
For a larger batch, cook the spinach in batches or use a very large wok.
The recipe also works with chopped kale, silverbeet or Swiss chard, and Asian greens.
