Equipment
- Oven
- 9 x 13-inch baking dish
- Aluminum foil
- Fork
Instructions
Step 1: Preheat the oven to 200°C / 390°F (180°C fan).
Step 2: Add all the baked fried rice ingredients except the bacon to a baking dish about 22 x 32 cm / 9 x 13 inches. Stir, then spread the rice evenly across the dish.
Step 3: Scatter the bacon across the surface.
Step 4: Cover with foil and bake for 40 minutes.
Step 5: Remove the foil and bake uncovered for 15 minutes to colour the bacon. The liquid should be absorbed and the rice cooked, though it may still look wet; it will absorb and soften as it rests.
Step 6: Cover loosely with foil and let stand for 10 minutes.
Step 7: Add the green onion and sesame oil. Fluff the rice with a fork and serve.
Notes
Long-grain white rice is recommended. Basmati rice and medium- or short-grain white rice can also be used, though medium- and short-grain rice will be stickier. Brown rice, paella or risotto rice, wild rice and other specialty rices are not recommended for this method.
Dry sherry, cooking sake or mirin can replace the Chinese cooking wine. For a nonalcoholic option, omit the wine, add 1/2 tablespoon extra soy sauce and add 30 g (2 tablespoons) unsalted butter with the sesame oil.
Refrigerate leftovers for up to 3 days and reheat in the microwave. Do not assemble the dish ahead; bake it as soon as the rice is mixed with the liquid.

About this recipe
This baked fried rice starts with uncooked rice and comes together in one baking dish. Add the bacon on top, bake covered and uncovered, then let the rice rest before fluffing.

Use long-grain white rice and low-sodium chicken or vegetable stock. Frozen diced vegetables work in the stated liquid ratio; fresh vegetables need an additional 1/4 cup of water.
