Instructions
Granita
Step 1: Put the granita ingredients in a jug just large enough to fit a stick blender. Blend until smooth, like a smoothie. Pour into a small container so the depth is no more than 3 cm / 2.2 inches. Freeze for 6 hours or more, until fully frozen.

Step 2: Use a fork to scrape the frozen granita into shavings. Serve immediately or return it to the freezer until needed.

Serving
Step 3: Place the oysters on a serving platter and pile the granita on top. Add jalapeño slices for decoration, if desired.

Notes
The granita keeps in the freezer for at least a month, scraped or unscraped.
Serve the oysters on ice, rock salt, or leafy greens to help keep them cold and provide a stable base.
About this recipe
This cucumber, lime, and jalapeño granita brings cool citrus tang and a gentle hint of spice to oysters. Blend the granita ingredients until smooth, freeze, then scrape into icy shavings and pile onto the oysters.

Make the granita ahead and keep it in the freezer until you’re ready to serve.
