Equipment

  • Oven
  • Rack
  • Foil-lined baking tray
  • Medium bowls
  • Small bowl
  • Paper towels

Instructions

  1. Step 1: Preheat the oven to 200°C/400°F (180°C fan). Place a rack on a foil-lined tray and spray the rack with oil.

  2. Step 2: Put the flour, whisked eggs, and panko in three separate medium bowls, choosing bowls shaped to fit the drumsticks.

  3. Step 3: Mix the seasoning in a small bowl. Put 1 tablespoon of it into the flour and the rest into the panko, then mix.

  4. Step 4: Pat the drumsticks dry with paper towels. Coat each in flour and shake off the excess, then dip it in egg and let the excess drip off. Place it in the panko, rotate it, and press the crumbs on all over, including the handle.

A drumstick is being rolled in panko breadcrumbs in a bowl.

Tip: For less-messy hands, use one hand for the flour and egg, then place the drumstick in the panko. Use your clean hand to sprinkle and press panko over it.

  5. Step 5: Place each coated drumstick on the rack, spacing them evenly. Repeat with the remaining chicken, then spray the drumsticks very generously with oil.

  6. Step 6: Bake for 25 minutes. Turn the drumsticks and spray them with oil again. Bake for a further 20 minutes, until golden brown and very crunchy.

  7. Step 7: Serve and enjoy.

Notes

Let the drumsticks cool for 5 minutes before serving so the crumb can set. Leftovers keep in the fridge for 3 days; a quick reheat in the oven can bring back some of the coating’s crunch.

Regular breadcrumbs can replace the panko. For a milder version, omit the cayenne and reduce the black pepper to 1/2 teaspoon.

About this recipe

These oven-baked drumsticks get their crunchy coating from panko and their bold flavor from a mix of herbs, paprika, cayenne, and black pepper. For a milder, kid-friendly version, omit the cayenne and reduce the black pepper to 1/2 teaspoon.
