Instructions
Instructions
Step 1: Preheat the oven to 200°C (400°F).
Step 2: Trim the bases of the Brussels sprouts, cut them in half, and remove the loose, rough outer leaves.
Step 3: Place the sprouts in a bowl, pour over the oil, and toss gently.
Step 4: Sprinkle with the garlic, salt, pepper, Parmesan, and breadcrumbs.
Step 5: Toss to coat, then spread the sprouts out on a tray, cut-side down.
Step 6: Roast for 20 minutes. Flip the sprouts, then roast for a further 10 minutes, until the outer leaves are deep golden brown and crispy.

Step 7: Immediately transfer the sprouts to a warm serving bowl. Scrape the loose Parmesan breadcrumbs off the tray and sprinkle them over the sprouts, then serve immediately.
Notes
For the sprouts, look for ones about 3 cm (1.25 inches) wide. Smaller sprouts cook quickly; larger ones have a more cabbage-like flavor.
For frozen Brussels sprouts, thaw them in a colander so they drain well, then dry them off before cooking.
Panko breadcrumbs are larger than regular breadcrumbs and add extra crunch.
Refrigerate leftovers for 3 to 4 days. Reheat in a 180°C (350°F) oven for 7 minutes, until heated through and crisp on the outside.
