Instructions
Step 1: Separate, wash, trim and dry the lettuce leaves. Slice any large leaves in half vertically and leave smaller leaves whole.
Step 2: Make the sauce: Mix all the ingredients except the water together in a bowl. Start by mixing in 3 tbsp water, a tablespoon at a time. Let the sauce sit for one minute. If it starts to split or is too thick, add another tablespoon of water. Keep adding water this way until the sauce is pourable and drizzle-able, with the oil incorporated.
Step 3: Arrange the leaves on a platter and drizzle about half of the dressing over them. You will not need all the dressing; keep the rest for another use. Garnish with sesame seeds. Alternatively, use the sauce for dipping raw vegetables.

Notes
Substitutions and storage
Chinese sesame paste can be replaced with 2.5 tbsp tahini.
Natural peanut butter is preferred, but regular smooth peanut butter works too.
Vegetarian oyster sauce can replace oyster sauce. Other soy sauce can replace dark soy sauce, though the sauce will be lighter in color.
For the lettuce, use Chinese lettuce (youmaicai or celtuce), baby cos, full-size cos, or iceberg lettuce.
Refrigerate extra sauce and bring it to room temperature before using; it firms up when cold.

About this recipe
Crisp lettuce leaves are served with a creamy sesame sauce that balances salty and sweet flavors. Drizzle the sauce over the leaves or serve it as a dip for raw vegetables.

The recipe makes more sauce than you need for the lettuce. Keep the extra for another salad or for dipping.
