Ingredients
For 6 servings
Cauliflower mash
Optional garnishes
Instructions
Step 1: Cut the larger florets in half or quarter so they’re all about the same size.
Step 2: Add the cauliflower and garlic to a large pot of boiling water. Cook for 10 minutes, until very soft.
Step 3: Scoop out a mug of the cooking water.
Step 4: Drain well, then transfer the cauliflower and garlic to a food processor.
Step 5: Add the remaining ingredients, starting with no water, and blend until smooth. If you don’t have a food processor, use a handheld blender.

Step 6: Use the reserved cooking water to adjust the consistency to taste and help the mash blend smoothly.
Step 7: Adjust the salt and pepper to taste.
Step 8: Transfer to a serving bowl, drizzle with melted butter and garnish with parsley if desired.
Step 9: Serve as a side with anything you’d usually serve with mashed potatoes.
Notes
Substitutions
Use extra-virgin or ordinary olive oil in place of the butter.
Replace the Parmesan with 1/4 to 1/2 teaspoon of Vegeta or vegetable stock powder.
Use 60 g (2 oz) cream cheese in place of the sour cream.
Use milk, dairy or dairy-free, instead of the cooking water.
Storage
Store in the fridge for 3 to 5 days, or freeze. Thaw before reheating in the microwave or gently on the stove.
