Notes
Make-ahead and substitutions
Keep the salad, dressing and garnishes separate until serving. Chopped salad keeps for up to 5 days in an airtight container. The dressing keeps for 2 to 3 days in the refrigerator; if keeping it longer, add the ginger and garlic before serving. Cooked chicken keeps for 3 days in the refrigerator and can also be frozen.
If using another green cabbage or all red cabbage, toss the salad with the dressing without the noodles and let it sit for 10 minutes so the cabbage softens slightly. Then continue with the recipe. Ordinary soy sauce can replace light soy sauce; avoid dark or sweet soy sauce. Use toasted sesame oil.
