Equipment

  • Bowl
  • Colander
  • Jar
  • Large bowl
  • Large salad bowl
  • Individual bowls

Instructions

Glass noodles

  1. Step 1: Place the dry noodles in a bowl and cover with freshly boiled water. Leave for 3 to 4 minutes, or until transparent and softened. Drain in a colander, rinse under running water to cool them quickly and reduce stickiness, then detangle with your fingers. Drain thoroughly and set aside to cool completely.

Tip: If the packet says to soak the noodles in cold water, use freshly boiled water instead.

Lime cashew crumble

  1. Step 2: Place the crumble ingredients in a bowl and toss together.

Dressing

  1. Step 3: Place the dressing ingredients in a jar and shake until well combined.

Salad

  1. Step 4: Place the glass noodle salad ingredients in a large bowl. Pour over the dressing and toss well. Add half the cashews and toss again.

Serve

  1. Step 5: Transfer the salad to a large salad bowl or individual bowls. Sprinkle with the remaining lime cashew crumble and serve.

Notes

For a meat-free salad or a vegetable-forward side, leave out the chicken and add more vegetables. Rice vermicelli noodles can replace glass noodles.

To prepare ahead, store the salad components separately and toss them together just before serving. The undressed salad components can be prepared up to 3 days ahead; the chicken determines the storage life. Once dressed, the salad is best eaten the same day. Keep the dressing refrigerated for up to 3 days. The lime cashew crumble keeps for a few days, though its lime flavor fades.
