Instructions
Marinate the pork
Step 1: Cut the pork in half to make two long strips.

Step 2: Mix the marinade ingredients in a bowl.
Step 3: Place the pork and marinade in a stain-proof container or zip-top bag. Marinate in the refrigerator for 24 to 48 hours; 3 hours is the stated minimum.
Roast
Step 4: Preheat the oven to 160°C/320°F.
Step 5: Line a tray with foil and place a rack on top. The rack is recommended but not essential.
Step 6: Remove the pork from the marinade, reserving the marinade. Place the pork on the rack.
Step 7: Roast for 30 minutes.
Step 8: Meanwhile, pour the reserved marinade into a saucepan and mix in the extra honey. Bring it to a simmer over medium-high heat and cook for 2 minutes, until syrupy. Remove from the heat.
Step 9: Remove the pork from the oven. Dab marinade all over, then turn the pork and baste it. Roast for a further 30 minutes.
Step 10: Remove the pork from the oven and brush it with marinade. Turn it, brush the other side, and roast for a further 20 minutes. If it is charring too quickly, cover it with foil.
Step 11: Baste the surface again and bake for a further 10 minutes, until caramelized and sticky. The meat should be tender but not falling apart like pulled pork. Rest for 10 minutes before slicing.

Step 12: Serve with rice and steamed Chinese greens.
Notes
Use all light soy sauce or all ordinary soy sauce if you prefer; avoid dark soy sauce because its flavor is too intense. For a five-spice substitute, use 1 tablespoon extra hoisin sauce and reduce the brown sugar to 1 teaspoon.
Pork shoulder also works well; use boneless, skinless shoulder and trim most of the thick surface fat. The pork can be cut horizontally into two thinner pieces or lengthwise into two strips. Freeze excess leftovers.
