Barbecue Rub for Ribs

Ribs

Homemade Barbecue Sauce

Equipment

  • Oven
  • Baking tray
  • Aluminum foil
  • Parchment paper
  • Saucepan

Instructions

Ribs

  1. Step 1: Combine the rub ingredients and rub the mixture onto both sides of the ribs, putting most of it on the meaty side. Set aside to marinate for 20 minutes or overnight.

  2. Step 2: Preheat the oven to 160°C/320°F.

  3. Step 3: Place the ribs in a single layer on a tray. Pour the apple cider underneath, cover with foil, and bake for 1 hour 30 minutes or until the meat is quite tender.

  4. Step 4: Remove the ribs from the oven and increase the temperature to 180°C/350°F. Remove the foil, drizzle the ribs with olive oil, and return them to the oven for 15 minutes or until the rub becomes crusty.

  5. Step 5: Line a new tray with foil and then baking or parchment paper.

  6. Step 6: Remove the ribs from the oven and transfer them to the lined tray. Pour any juices from the first tray over the ribs.

  7. Step 7: Flip the ribs so the bonier side is facing up. Coat with barbecue sauce and bake for 10 minutes.

  8. Step 8: Remove the ribs from the oven and turn them so the meaty side is facing up. Coat with barbecue sauce and bake for 5 minutes. Repeat 2 or 3 more times, until the ribs have a thick glaze.

  9. Step 9: Cut the ribs into individual or multiple-rib portions and serve with the remaining barbecue sauce.

Barbecue Sauce

  1. Step 10: Place all the sauce ingredients in a saucepan and simmer over medium heat, stirring occasionally, for 45 minutes or until thickened.

  2. Step 11: Adjust the sweetness with brown sugar or honey, the salt with salt, and the sourness with vinegar. Use the sauce to glaze the ribs and serve alongside them.

Notes

Baby back and St. Louis-style ribs are ideal; pork spareribs also work. For spareribs, reduce the covered baking time to 1 hour 10 minutes.

Pale beer, other fruit ciders, broth, or water can replace the hard cider. For the molasses, the listed alternatives include dark corn syrup, dark brown sugar, or golden syrup.
