  • Large pot
  • Very large skillet

Instructions

Roast the eggplant

  1. Step 1: Preheat the oven to 240°C / 450°F (220°C fan). Line a baking tray with baking or parchment paper.

  2. Step 2: Toss the eggplant with the oil, salt, and pepper. Spread it on the tray and roast for 20 minutes.

  3. Step 3: Flip the eggplant and roast for a further 5 minutes. Let it cool on the tray; this helps it hold its shape when tossed.

Cook the pasta

  1. Step 4: Bring a large pot of salted water to a boil. Start cooking the pasta a couple of minutes after you begin making the sauce. Cook until al dente or to your liking.

Make the sauce

  1. Step 5: Heat the oil in a very large skillet over medium heat. Add the garlic and cook for 20 seconds, until golden. Add the onion and cook for 2 to 3 minutes, until translucent and cooked through.

  2. Step 6: Increase the heat to medium-high and add the wine, if using. Let it simmer, scraping the base of the pan to deglaze, until the wine mostly evaporates.

  3. Step 7: Add the tomato passata. Pour the water into the passata bottle, screw on the lid, shake, and pour the water into the pan.

  4. Step 8: Add the dried herbs, red pepper flakes, salt, and pepper. Stir and simmer for 5 minutes.

  5. Step 9: Stir in the eggplant, then add the cooked and drained pasta. Gently toss until the pasta is coated in the sauce, taking care not to mash the eggplant.

  6. Step 10: Serve immediately, garnished with fresh basil and Parmesan.

Notes

Variations and make-ahead tips

  • Dry white wine is optional; omit it if you can’t consume alcohol.

  • If you don’t have fresh basil, use 1 1/2 teaspoons fresh thyme leaves, or add 1/2 teaspoon dried thyme or oregano to the sauce.

  • For a passata substitute, use crushed canned tomatoes and simmer the sauce for 20 minutes to soften them. Adjust when you start cooking the pasta accordingly.

  • For make-ahead preparation, toss the eggplant in the sauce, cool, and use as needed. Reheat pasta that is already in the sauce in the microwave for 2 minutes on high for one serving, adding water as needed to loosen.

About this recipe

Pasta alla Norma pairs roasted eggplant with a smooth tomato-passata sauce and pasta for a satisfying vegetarian main. Fresh basil and grated Parmesan finish each serving.

Roasting the eggplant helps it brown while holding its shape when gently tossed with the sauce. Use spaghetti or another long or short pasta.
