Instructions
Step 1: Mix the marinade ingredients in a bowl.
Step 2: Add the shredded beef and mix to coat. Set aside for 5 minutes.
Step 3: Heat the cooking oil in a large skillet over high heat. Add about half the beef and spread it into a single layer.
Step 4: Leave the beef undisturbed until golden, about 1 minute. Flip and cook the other side briefly, about 30 seconds, just to heat through and add a little colour. Remove from the skillet.
Step 5: Repeat with the remaining beef.
Step 6: Serve over rice or noodles with lime or Nuoc Cham and your choice of garnishes.
Notes
Use cooked beef with a fairly neutral flavour, such as leftover brisket. Lemongrass paste can be replaced with 1 thick lemongrass stalk, very finely minced.
The beef can be served without a sauce, with a squeeze of lime, or with Nuoc Cham.
About this recipe
Make a quick, flavour-packed meal from leftover cooked beef. A garlicky lemongrass marinade brings sweet, savoury and tangy notes, while a quick pan-fry gives the beef golden edges.
Serve over rice or noodles with lime or Nuoc Cham. Add coriander or green onions, cucumber, red chilli and crushed peanuts as you like.
