Instructions
Step 1: Toss the broccoli with the red wine vinegar, salt and pepper. Set aside for 10 minutes to lightly pickle.
Step 2: Heat the olive oil in a small skillet over medium heat. Add the garlic, cumin seeds and red pepper flakes. Cook, stirring, until the garlic is light golden, then stir in the sesame oil.

Step 3: Immediately pour the oil mixture over the broccoli. Toss very well with a rubber spatula, scraping all the oil from the sides of the bowl.

Step 4: Leave on the counter to marinate for at least 1 hour, or refrigerate for up to 48 hours.
Step 5: Serve at room temperature, not cold.

About this recipe
Red wine vinegar lightly pickles the broccoli before it’s tossed with garlic, cumin and sesame oil warmed in olive oil. The salad needs time to marinate, so plan to let it rest for at least 1 hour.

Serve it at room temperature as a side dish for 4–5. If you prefer cooked broccoli, lightly steam the florets before continuing with the recipe.
