Instructions

Instructions

  1. Step 1: Heat the oil in a large skillet over medium-high heat. Add the sausages and cook, turning, until browned as much as possible all over and cooked through. Cooking time varies with sausage size; the sausages used here take around 8 minutes.

  2. Step 2: Transfer the sausages to a plate and turn the heat down to medium.

  3. Step 3: Leave around 2 tablespoons of oil in the skillet. If there is much less, add a little butter.

  4. Step 4: Add the onion and garlic and cook until golden brown, around 4 minutes.

  5. Step 5: Add the flour and mix it through. Cook, stirring constantly, for 1 minute.

  6. Step 6: Add about 3/4 cup of beef stock and mix it into the onion until it forms a thick paste. Add the remaining stock and mix until combined. If the gravy is lumpy, whisk it until smooth. Add the dark soy sauce, if using.

  7. Step 7: Simmer, stirring, for 2 to 3 minutes, until the gravy thickens but is slightly thinner than you want; it will thicken more as you serve it.

  8. Step 8: Add the salt and pepper. Stir and taste, then add more salt if you want.

  9. Step 9: Serve the sausages with plenty of gravy, mashed potato and peas on the side.

Notes

Thick pork sausages are a classic choice, but other sausages can be used. Lean sausages release less juice and fat, so the gravy may be less flavourful.

The onion can be left out if you prefer. Chicken stock can replace beef stock; the gravy will have a lighter colour.
