Instructions
Step 1: Place the potatoes in a large pot of cold tap water with 1 tablespoon of salt. Bring to a boil over high heat, then lower the heat to medium so the water simmers gently; this helps prevent the skins from splitting. Cook for 10–15 minutes, until a knife pierces the potatoes without resistance. Alternatively, steam the potatoes.
Step 2: Drain the potatoes in a colander and leave them for a minute to steam dry. If they are wet, the butter will not stick.
Step 3: Transfer the potatoes to a bowl and add the salt, pepper, and butter. Toss until the butter melts and coats the potatoes.
Step 4: Add the herbs just before serving. Stir them through, transfer the potatoes to a serving bowl, and serve warm.
Notes
For a different herb combination, adjust the herbs to taste; thyme is also suggested as a good choice with potatoes.
The potatoes can be served at room temperature. Refrigerate them after cooking, then bring them fully to room temperature before serving. Pour over melted butter and add the herbs just before serving. Do not serve them cold, as the butter will harden into clumps.
