Equipment

  • Small nonstick skillet
  • Parchment-lined tray
  • Bowl
  • Jar
  • Large bowl

Instructions

Candied Nuts

  1. Step 1: Melt the butter in a small nonstick skillet over medium heat. Add the sugar, stir briefly, then leave it until it mostly melts.

  2. Step 2: When the sugar starts bubbling, add the nuts.

  3. Step 3: Stir for 2 minutes. Pour the nuts onto a parchment-lined tray.

  4. Step 4: Spread the nuts out and let them cool. Roughly chop half and leave the rest whole.

Plump Cranberries

  1. Step 5: Put the cranberries in a bowl and pour freshly boiled water over them. Leave to soak for 10 minutes, then drain.

Apple

  1. Step 6: Drizzle the apple slices with lemon juice and toss to coat.

Dressing

  1. Step 7: Put the dressing ingredients in a jar and shake well. Adjust to taste: add more oil for a creamier dressing, sugar for sweetness or vinegar for tartness.

Assemble

  1. Step 8: Put the salad leaves in a large bowl with half the apple slices and all the onion. Drizzle with half the dressing, then toss.

  2. Step 9: Scatter over the cranberries, the desired amount of walnuts, the remaining apple slices and the feta. Drizzle with the remaining dressing and serve immediately.

Notes

Use pecans, almonds or other nuts in place of the walnuts. Sunflower seeds and pepitas are also suggested as substitutes.

Extra candied nuts keep for a week or two in an airtight container, or can be frozen for months.

Red apple adds color, and a squeeze of lemon helps keep the slices from browning. The candied nuts and plumped cranberries are optional, but add extra texture.
