Notes

Ripe avocado and storage

Use very ripe avocados. Guacamole is best made fresh. To keep it green for up to two days in the refrigerator, smooth the top in an airtight container and cover with a thin layer of water or olive oil. Pour off the liquid and stir before serving.

Getting ahead

Make the onion paste ahead and prepare the coriander and lime. Cut the avocados and finish the guacamole just before serving.
