Instructions
Step 1: Shake the dressing ingredients together in a jar.
Step 2: Poach the chicken: Bring water to a boil, add the chicken, then turn off the heat and leave it in the water for 20 minutes. Cool the chicken to room temperature, then cut it into 2 cm / 0.75-inch cubes. Toss with the salt, pepper and 2 tablespoons of dressing. Set aside.

Step 3: Cook the bacon: Place the bacon strips in a cold non-stick pan without oil. Turn the heat to medium-high. As the pan heats, the fat will begin to melt. Cook for 2 minutes until golden, turn and cook the other side for 1 1/2 minutes until golden. Drain on paper towels. Once cool and crisp, chop into 1.5 cm / 0.6-inch pieces.

Step 4: Assemble the salad: Spread the lettuce on a large platter. Arrange the egg, bacon, avocado, tomato and chicken on top in neat rows. Crumble the blue cheese over the salad and sprinkle with chives. Pour the dressing into a jug.

Step 5: Serve the salad and dressing so everyone can help themselves.

Notes
For the blue cheese, use gorgonzola dolce, Roquefort or another blue cheese. Feta or goat cheese can be used instead; add 1 extra tablespoon of oil to the dressing to make it less tangy. Cooked roast chicken can stand in for poached chicken.
