Instructions
Step 1: Mix the rub ingredients. Rub the mixture all over the brisket. If time permits, leave it in the fridge for 30 minutes to 24 hours.

Step 2: Combine the BBQ sauce ingredients in a slow cooker and mix. Add the brisket, pushing it in if needed.
Step 3: Slow-cook for 8 hours for a 1.5 kg / 3 lb brisket or 10 hours for a 2 kg / 4 lb brisket.
Step 4: Remove the brisket and place it on a tray.
Step 5: Pour the slow-cooker liquid into a saucepan. Bring it to a simmer over medium-high heat and reduce it until it reaches a syrup consistency; it will thicken more as it cools.
Step 6: Meanwhile, drizzle the brisket with oil and roast it in a 200°C/390°F oven for 15 minutes, until brown spots appear. Remove it and baste generously with sauce, then return it to the oven for 5 minutes. Remove and baste it again, then return it to the oven for 5–10 minutes, until caramelized.
Step 7: Slice the brisket thinly across the grain and serve with the remaining BBQ sauce. Serve it as a meal with sides or pile it onto rolls with coleslaw to make sliders.

Notes
For another slow-cooking beef cut, rolled chuck is listed as the best substitute; brisket is preferred because it holds its shape for slicing.
To make ahead, slow-cook the brisket without baking it, then refrigerate it with the unreduced cooking liquid for up to 3 days. Reheat covered at 180°C/350°F for 20 minutes or until warmed through, then uncover and finish as directed. Warm the sauce separately.
For a BBQ finish, oil and preheat the grill to medium. Brown the brisket on both sides, then baste and turn it repeatedly until the glaze is caramelized.
