Instructions
Two large cookies
Step 1: Preheat the oven to 190°C/375°F (170°C fan-forced). Line a tray with baking paper.
Step 2: Put the butter in a microwave-safe bowl. Heat on high for 30 seconds or until mostly melted. Stir to finish melting; it should look a little milky.

Step 3: Add both sugars to the butter and mix with a rubber spatula. Add the yolk, vanilla and salt, then mix to combine.
Step 4: Scatter the flour over the surface, then scatter the baking soda over the flour. Mix until the flour is almost fully incorporated. Stir in most of the chocolate chips, reserving some for the tops.

Step 5: Form two balls and flatten each to 1.5 cm/0.6 inches thick. Place them on the tray. If the dough is too sticky to handle, refrigerate it for 5 to 10 minutes.

Step 6: For three or four smaller cookies, use the same oven temperature and baking time. For one giant cookie, follow the separate directions below.
Step 7: Bake for 13 to 14 minutes, until the edges are tinged gold and the center is pale golden.
Step 8: Place the reserved chocolate chips on top of each cookie; the chocolate will melt and hold them in place. Sprinkle with salt flakes if using.

Step 9: Leave the cookies on the tray for 10 minutes to firm up and finish cooking. Enjoy warm, or transfer to a rack to cool completely before storing in an airtight container.
One giant cookie
Step 10: Preheat the oven to 180°C/350°F (160°C fan-forced). Make one large ball and flatten it to 2 cm/0.8 inches thick.
Step 11: Bake for 16 to 18 minutes, until the edges are golden and the middle is pale golden. Press the reserved chocolate chips onto the surface, then cool on the tray for 10 minutes.
Notes
For a different rise and spread, baking powder can replace the baking soda; use 1/4 teaspoon. The cookie will puff more and spread less.
Store fully cooled cookies in an airtight container for 3 to 4 days. They are at their best on the day they’re made.
