Instructions
Step 1: Put the ingredients in a bowl and mix to combine. The dough will be soft, too soft for scooping. Refrigerate for 10 minutes.
Step 2: Meanwhile, preheat the oven to 180C / 350F (standard) or 160C/320F (fan / convection).
Step 3: Line 2 trays with parchment paper.
Step 4: Place 1 tbsp scoops of dough onto the trays, 5cm/2 inches apart. Use a cookie scoop if desired.
Step 5: Dip a large fork in a bowl of hot tap water to prevent it sticking to the dough. Press down on the dough, then press 90 degrees the other way so each cookie is 1 cm / 2/5 inch thick. Re-dip the fork in water as needed.
Step 6: Put both trays in the oven and bake for 10 minutes, swapping the trays halfway through, or until the cookies are light golden on the surface and golden on the edges. Bake longer if you want crisper cookies.
Step 7: Leave the cookies to cool on the tray. Store in an airtight container for up to 4–5 days.
