Instructions
Salmon
Step 1: Take the salmon out of the refrigerator 20 minutes before cooking.
Step 2: Heat the oven to 220°C/430°F (standard) or 200°C/390°F (fan). Position a shelf about 20 cm/8 inches from the broiler at the top of the oven.
Step 3: Sprinkle both sides of the salmon with salt and pepper.
Step 4: Put the sesame seeds in a shallow dish. Press the salmon into the seeds to coat all sides, then place it on a tray.

Step 5: Drizzle the top of the salmon with oil.
Step 6: Bake for 10 minutes. Switch the broiler to high and broil for 3 minutes, until the top is lightly golden. Alternatively, bake for 5 more minutes; the top will be less golden.

Step 7: Remove the salmon from the oven and rest for 3 minutes. Serve with the soba and greens, topped with scallions if using and drizzled with the dressing.
Soba and greens
Step 8: Bring a large pot of water to a boil.
Step 9: Cook the soba according to the package directions. Add the greens for the final minute of cooking.
Step 10: Drain, then divide the soba and greens among bowls.
Dressing
Step 11: Put the dressing ingredients in a jar and shake. Set aside for 5 minutes.
Notes
If the salmon is very wet, such as after thawing, pat off the excess water without drying it thoroughly. Choose any greens you like and use enough for your servings.
For the dressing, use light or regular soy sauce rather than dark or sweet soy sauce. If you leave out the mirin, substitute 2 to 3 tablespoons of cider vinegar; you may need to add more sugar.
The salmon continues cooking as it rests. Check the thickest part if you are unsure whether it is cooked to your taste.
