Instructions
Roasted broccolini
Step 1: Preheat the oven to 220°C/425°F (200°C fan).
Step 2: Mix the tahini sauce ingredients until combined. It should be loose enough to drizzle, but not too runny. Set it aside for 15 minutes.
Step 3: Pile the broccolini on a tray, drizzle with oil, and sprinkle with salt, pepper, and garlic.
Step 4: Roast for 12–15 minutes, until the broccolini tips are dark brown and crunchy and the stems are just tender. For a softer result, lower the oven temperature to 180°C/350°F and cook for 20 minutes.

Step 5: Transfer the broccolini to a serving plate and let it cool until warm. Drizzle with tahini sauce, sprinkle with almonds or pine nuts, and serve. It is also good at room temperature.

Variations
Step 6: Serve the tahini sauce with other roasted vegetables, including carrots, cauliflower, broccoli, green beans, or asparagus.
Notes
Use hulled tahini for a less bitter flavor. Stir it well before measuring if the oil has separated; warming it briefly can make it easier to mix.
Honey can be replaced with maple syrup or another sweetener. The garnish can be made with flaked almonds, pine nuts, pistachios, sunflower seeds, or pepitas.
The tahini sauce also pairs well with roasted carrots, cauliflower, broccoli, green beans, and asparagus.
