Instructions
Step 1: Bring a large pot of water to a boil. Cook the pasta according to the packet directions, stopping 1 minute early. Just before draining, scoop out 1 cup of pasta cooking water and set it aside.
Step 2: Heat the oil in a very large skillet over high heat. Add the garlic and cook for 15 seconds.
Step 3: Add the sausage meat and cook, breaking it up as you go, until some little golden bits form, about 4 minutes.
Step 4: Add the wine. Scrape the bottom of the skillet to loosen the golden bits, and cook until the wine evaporates and its smell disappears.
Step 5: Add the remaining ingredients except the kale. Stir well and bring to a simmer. Turn the heat to low and simmer gently for 2 minutes to bring the flavours together.
Step 6: Add the pasta and kale. Toss for 1 minute to coat the pasta with the sauce. If the sauce gets too thick, add some of the reserved pasta cooking water to loosen it.
Tip: The sauce thickens as you toss the pasta with it.
Step 7: Serve immediately, garnished with freshly grated Parmesan.
Notes
Ingredient options
Use another pasta in place of the orecchiette if needed.
Baby spinach, Swiss chard or Tuscan kale can be used in place of kale.
If you don’t have tomato passata, use crushed canned tomatoes and simmer rapidly for 5 minutes to reduce them. Tomato paste is also mentioned as an alternative, but no quantity is provided for it.
If you don’t have a premixed Italian herb blend, use equal amounts of thyme, basil, oregano and parsley, with a pinch of rosemary.
