Instructions
Step 1: Heat the oil in a large pot over high heat. Add the garlic and onion and cook for 1 minute. Add the bell pepper and cook until the onion is translucent.
Step 2: Add the ground beef and cook, breaking it up as you go.
Step 3: When the beef has turned from red to brown, add all the remaining ingredients except the cheese. Stir, bring to a simmer, then reduce the heat to medium.
Step 4: Cover and cook for 12 minutes, or until the macaroni is al dente: just cooked, with a little firmness remaining. The mixture should be saucy, but not have a lot of excess liquid.
Step 5: Turn off the heat, leaving the pot on the stove. Stir in half the cheese; the mixture should still be a little saucy. Adjust the salt and pepper to taste. Top with the remaining cheese, cover again and leave until the cheese melts, about 2 minutes. The sauce will continue to absorb during this time.
Step 6: Sprinkle with coriander, if desired, and serve immediately.
Notes
Storage and variations
For a make-ahead freezer meal, stop cooking when the pasta is still a little firm and the dish is saucy. Cool, top with cheese, cover and freeze. Thaw overnight in the refrigerator and reheat in the microwave until steaming, stirring well. Leftovers can also be frozen in an airtight container for up to 3 months.
Ground chicken, pork, turkey or lamb can be used instead of beef. Cayenne pepper can be replaced with pure ground chili; adjust the amount to taste.

About this recipe
This one-pot dinner brings together the flavors of chili and macaroni and cheese. Ground beef, beans, tomatoes and spices cook with elbow macaroni, then shredded cheese is stirred through and melted on top.

Turn off the heat as soon as the pasta is just cooked; it will continue cooking in the residual heat while the cheese melts.
