Salad
Lemon Niçoise dressing
Instructions
Step 1: Shake the dressing ingredients together in a jar.
Step 2: Boil the potatoes until tender. Drain and leave them to cool completely, then slice them in half.
Step 3: Boil the green beans until tender or cooked to your liking. Drain and rinse under cold running water to cool them quickly. Drain again and pat dry.
Assemble the salad
Step 4: Arrange the cos leaves on a large, wide plate.
Step 5: Scatter and layer the remaining ingredients around the plate, finishing with the eggs, olives and tuna chunks. Drizzle with the dressing and serve.

Notes
Regular potatoes can be peeled and chopped into chunks or slices instead of using baby potatoes.
For the olives, Kalamata, Ligurian or Niçoise varieties in brine or oil are good options. Tuna packed in oil is preferred to tuna packed in spring water.
For a variation, replace the tuna with around a dozen anchovies. Other vegetables sometimes used include cucumber, capsicum, artichokes, broad beans, red onion, eschalots and radishes; parsley or basil can also be added.
About this recipe
This hearty Niçoise salad combines tuna, potatoes, green beans, tomatoes, eggs and black olives with a bright lemon-Dijon dressing. Serve it as a satisfying lunch or as part of a larger meal.
