Notes

Variations and storage

Use iceberg or another crisp lettuce in place of romaine. White wine vinegar can replace the red wine vinegar; apple cider vinegar or sherry vinegar can also be used. Any bread works for the croutons, and you can use your favorite olives.

For make-ahead storage, keep the dressing separate from the salad. Store the croutons in the pantry and the Parmesan in a container; refrigerate the remaining salad ingredients together. They keep for 24 hours and are still acceptable for up to 48 hours. Once dressed, the lettuce wilts after around 30 minutes.
