Equipment

  • Oven
  • 12-hole standard muffin tin
  • Mixing bowls
  • Ice cream scoop
  • Cooling rack

Instructions

  1. Step 1: Preheat the oven to 180°C/350°F (160°C/320°F fan).

  2. Step 2: Generously brush a standard 12-hole muffin tin with butter.

  3. Step 3: Whisk the dry ingredients together in a bowl.

  4. Step 4: In a separate bowl, whisk the wet ingredients together.

  5. Step 5: Pour the wet ingredients into the bowl of dry ingredients. Mix 8 times.

  6. Step 6: Add the cheddar, feta, sun-dried tomatoes, roasted peppers, olives and green onions. Mix as little as possible, just until the remaining bits of flour are incorporated; do no more than 7 large stirs.

Tip: Minimal mixing helps keep the muffins soft.

  7. Step 7: Divide the batter among the 12 muffin-tin holes; an ice cream scoop can be used. The batter should be thick and fill each hole slightly mounded.

  8. Step 8: Bake for 25 minutes, or until the muffins are golden and crusty and spring back when touched in the centre.

  9. Step 9: Cool for 10 minutes, then transfer the muffins to a cooling rack. Serve warm.

Notes

Substitutions and storage

Use plain yogurt in place of sour cream. To make a buttermilk substitute, combine 1 teaspoon lemon juice with 1/4 cup milk, let stand for 10 minutes, then use in place of the sour cream.

The listed add-ins can be swapped for other savoury options. The recipe also suggests using 1/4 to 1/2 cup of an oniony ingredient or fresh herbs, such as onion, leeks, green onion, parsley or chives.

Once cooled, store the muffins in an airtight container for 3 to 4 days. In a very hot, humid climate, refrigerate them. They can also be frozen for up to 3 months.
