Equipment

  • Large bowl
  • Bowl
  • Whisk
  • Rubber spatula
  • 23 x 33 cm (9 x 13-inch) metal pan
  • Baking tray or foil
  • Cooling rack

Instructions

  1. Step 1: Heat the oven to 180°C/350°F (160°C fan). Spray a 23 x 33 cm (9 x 13-inch) metal pan with oil, then line it with baking or parchment paper.

  2. Step 2: Whisk the dry ingredients together in a large bowl.

  3. Step 3: Whisk the wet ingredients together in a separate bowl until combined.

  4. Step 4: Pour the wet ingredients into the dry ingredients. Mix with a rubber spatula until the flour is mostly incorporated but a little flour is still visible. Add the cheese and stir until no flour is visible. A few small lumps are fine; they will bake out.

  5. Step 5: Scrape the batter into the prepared pan and spread it evenly; it will rise as it bakes. Spread the pizza sauce over the surface. Sprinkle on the cheese, then add the onion, capsicum, olives and pepperoni, in that order.

  6. Step 6: Bake uncovered for 25 minutes. Cover with a baking tray or foil and bake for another 15 minutes.

  7. Step 7: Let the bread cool in the pan for 10 minutes. Use the paper overhang to lift it out or slide it onto a cooling rack. Cool for another 10 minutes before slicing.

  8. Step 8: Serve at room temperature, or warm it in the oven and drizzle with a little olive oil and a pinch of oregano.

Notes

For the batter, use a melting cheese with flavour, such as colby, cheddar or Monterey Jack. Plain yogurt can replace the sour cream. If using only mozzarella, add an extra 1/2 teaspoon salt to the batter.

The notes say ceramic or glass pans can be used, though the bread may rise slightly less; add 3 minutes to the bake time.

The recipe notes say to freeze the cooked bread for up to 3 months. They also advise using an insulated lunchbox on a really hot day.
