Equipment

  • Heavy-based skillet or frying pan
  • Spatula
  • Cutting board

Instructions

  1. Step 1: Spread butter over both sides of each slice of bread—all four sides.

  2. Step 2: Heat a heavy-based skillet or frying pan over medium-low heat without oil or butter. Place both slices of bread in the pan and lightly toast for 1 minute, until warmed through and lightly crusted. This gives the cheese a head start melting after you flip the bread.

  3. Step 3: Flip one slice of bread and pile on the cheddar, followed by the mozzarella. Place the other slice on top, with its hot toasted side against the cheese.

  4. Step 4: Cook for 3 minutes, or until the bread is evenly golden and crisp, pressing down lightly with a spatula now and then. If the bread is browning too quickly, take the pan off the heat briefly to cool and lower the heat.

  5. Step 5: Turn the sandwich over and cook the other side for 3 minutes, or until the bread is golden and the cheese has melted. Take a quick look inside if you are unsure whether the cheese is fully melted.

  6. Step 6: Transfer the sandwich to a cutting board and cut it in half in one swift motion. Admire the cheese pull and serve.

Notes

The amount of butter and cheese you need can vary with the shape and size of your bread. The recipe notes that a little more is better than too little.

Other bread can work, too. Choose slices that are not too thick, thin, soft or holey. For the flavourful cheese, Monterey Jack, colby, Swiss or cheddar are listed as alternatives. Cheese slices work, though freshly grated cheese is preferred for a smoother melt.
